What is the difference between OAuth and OpenID Connect?

OAuth 2.0 handles authorisation (access to resources); OpenID Connect adds authentication (who the user is) with standard ID tokens and user info.

Can each customer use their own identity provider?

REST, GraphQL or gRPC?
